Potatoes are arguably one of the best sources of carbohydrates that we have available to us today. They are high in micronutrients, a good source of fiber, high in volume/low in calories (aka very satiating), and low in anti nutrients that inhibit the absorption of other micronutrients. Steaming and air frying are arguably the best way to enjoy your potatoes as they are great ways to dodge excess oil and calories.
- Cube potatoes (white or sweet) and throw in a big bowl.
- Coat in 1-2 tbsp extra virgin olive oil (depending on amount)
- Grab your favorite seasoning and season to desired
- Bake in the air fryer at 375 F for 25 minutes
